I'm getting my bake on!

So far I've made: whoopie pies, Pot-o-gold Cupcakes and Mint Chocolate Chip Ice Cream Cone Cupcakes.

For the whoopie pies I tried out my new whoopie pie pan. Since it was my first time making whoopie pies, I tried to keep it simple, and made a chocolate cake with peanut butter frosting.
The pot-o-gold cupcakes were pretty easy too. I just made a chocolate cake and vanilla icing with gold flecks on top.
The Mint Chip Cupcakes were a bit harder. I modified a vanilla recipe by puting mint extract instead of vanilla, adding chocolate chips, and a teeny bit of green food coloring. I tried out this really fun idea of putting the batter in ice cream cones instead of cupcake liners! It was a Mint Chocolate Chip Cupcake in an ice cream cone, with vanilla chocolate swirl frosting!

So this time around, when i went into Great Sage, I had the Mahalo cake, which was great! Because coconut and chocolate and almonds are all so good together, the Mahalo cake was really, really good! Great Sage's new menu is really cool! They've added, a raw blueberry cheesecake, the mahalo cake(wink wink) and the tart cherry pie!:D The Mahalo cake was layers of scrumptious coconut cake with yummy coconut frosting and chocolate ganache, topped with toasted almonds. I highly suggest it if you are craving something decadent and tasteful. Here are some pics, enjoy!:)

Chocolate Peanut Butter Cupcakes!

Spring Has Sprung! (cheesy, right?) And to celebrate, i've made some vegan Chocolate Peanut Butter Cupcakes!:D It's just my wacky cake recipe, with my peanut butter frosting recipe and chocolate in the middle and some chocolate decor on the top.

Choco-LOT!

Sometimes, for us vegans, it's hard to get all the cute valentine's day's chocolates we want. So that's why i made it my mission, this valentine's day, to make cute, vegan, tasty choclates! So i ran to the store and bought a few candy molds, and ingredients, and went to work! The first chocolates i made were chocolate hearts, with a peanut inside and pink sprinkles on top. Then i made some candy bars. For these i used a cookie pan with cute v-day designs. These were chocolate bars with crushed peanuts and pink sprinkles in the middle. after those, i made peanut butter cups, but the peanut butter middle was to liquid-y, so i melted the peanut butter cups and mixed the peanut butter and chocolate together and re-poured them into my PB cup molds. and they turned out great! then i had a few failures. i melted my vegan marsh mellows and  poured them into my molds, then put chocolate on top and let them chill, but the problem was, they didn’t come out easy. but i eventually got them out. i also got these super cute little valentine’s day boxes, which i got at Jo-ann’s for pretty cheap. Happy Valentine’s Day!

valentine's day! almost here...

Valentine's Day, tomorrow, i will be making some delish sweets and treats. And usually us vegans don't get in on the valentine's day chocolate action, but not this year! well, yes, there are some places that sell vegan candies and chocolates, well, LOTS, but it's really (well, pretty) easy to make your own vegan candies and chocolates, so i thought, what the heck. i'll make 'em. So, they're pretty much like peanut butter cups, but instead of the peanut butter, any flavor you want, and any shape.

A Day in D.C.!

A few days ago, my family and i went to Busboys And Poets in Washington D.C. Busboys and Poets isn't all vegan but they have alot of vegan items, like: Vegan Nachos, Pan-seared basil tofu and The Vegan. Which consists of vegan, mushrooms, onions, green and red pepper, vegan pepperoni on a whole-wheat crust. But it's not just savorie foods, you can also indulge in some vegan desserts, like: Vegan Cheesecake, Parfaits, Chocolate chip cookies and brownies served with vanilla ice cream, vegan of course. and fries of course were nommy, then again, i've never met a fry i didn't like. :) for dinner i had their veggie burger. But about half way through, my mom traded her falafel for my veggie burger becuase it was too spicy for me. The falafel was great! But the best falafel i've ever had was at Olive's on the campus of Princeton University in New Jersey. My dad had a pepperoni calsone and my bro had a fried PB& Agave sandwich.

Next, we ate our dessert at Sticky Fingers Bakery, also in Washington D.C. Sticky Fingers varies from cupcakes to cowvin cookies, all 100% vegan. They also make vegan lunches, brunches and more! You can get a grilled cheese, deli sandwiches, burritos, lasagna, patato salad, and even pancakes! All sticky fingers products are: 100% vegan, dairy/lactose-free, egg-free, cholesterol-free, low in saturated fat, made with heart-healthy soy and non-hydrogenated oils.

My cupcake is the coconut one, because i lovelovelove coconut! My mom had the stout cupcake which is the one with ganache and the dollop of buttercream frosting. My mom wanted to add " it's good for people who don't like sugary-sweet desserts, like me."
My brother enjoyed a peanut butter chocolate cupcake, which is the one with the chocolate drizzle and peanuts sprinkled on top. He says "I loved peanuts so it was dilish!"
And my dad had the red velvet cupcake, the one with the tiny red heart on the frosting.

Wow.

Wow. The holidays were here, and now they're gone!

Whew! Cookie Baking Spree!

Whew! i made SO many cookies for the holidays! i made Cinnamon Sugar Snowflakes, Peanut Butter Chocolate Buttons, Sugar Cookies, Spritz and more Spritz! here are the pics, and a recipe:
Little tip for the Spritz, i recommend using less flour than the recipe calls for. good luck!
p.s. here are the pics from our thanksgiving! i made the caramel pecan bars, and mashed potatoes my dad made the pumpkin and apple pies, and my mom made the "turkey" and the veggies and my bro made the biscuits and gravy!

And now for the recipe!

Super-Easy Sugar Cookies
3/4 Cup Vegan Margarine
1 Cup Sifted Confectioner's Sugar
1 Tablespoon Ground Flax
3 Tablespoons Water
1 1/2 Teaspoons Vanilla Extract
2 1/2 Cups All-Purpose Flour, Sifted
1/4 Teaspoon Salt



Cream butter and confectioner's sugar in a large bowl until fluffy.
In a small bowl beat the flax and water together until frothy. Combine with sugar and butter, add vanilla extract. Beat until smooth. In a medium bowl, combine flour and salt. Add dry ingredients to creamed mixture, stir until a soft dough forms. divide dough into half. Wrap in plastic wrap and chill for 1 hour in the fridge.
Preheat the oven to 350 degrees.  On a lightly floured surface, use a floured rolling pin to roll out half the dough to 1/4-inch thickness. Cut out with desired cookie cutters. Bake for 8-10 minutes or until edges are lightly browned. Transfer cookies to a wire rack to cool. Repeat with remaining dough.
